Do you ever just feel like you’re in a rut cooking the same thing over and over? I certainly do, but the changing seasons makes me want to change up my menu! Less grilled meat and bbq beans and more hearty style soups, stews and the like. Here are a few from the Brejcha family files for when I once again want to turn on the oven (which I almost never do in the summer)…

In my bag of tricks I have really quick easy meals and I have some that require a little more time, but not much more because I don’t have time for that!

If you have 15 minutes to get food on the table:

CHICKEN & RICE QUICK MEAL

2 packages Knorr Chicken Flavored Rice

1 can white meat chicken, drained

1 small package frozen mixed vegetables , heated up and drained

Mix rice with the required 4 cups water, microwave for 6 minutes uncovered, add the veggies and chicken, microwave for 5 more minutes. Add another 1/2 water and microwave for 2 more minutes. Serve.

BEEF & RICE QUICK MEAL

2 packages Knorr Beef Flavored Rice

1 pound ground beef cooked into crumblesand drained

1 can green beans, drained

Add the 4 cups required water to the rice and microwave uncovered for 6 minutes. Add an additional 1/2 cup water, the cooked meat and green beans and microwave for an additional 5 minutes. Serve.

This meal originated in what we used to call “porcupine balls”.
